Authentic! Traditional ambiance, love the restaurant decor. Staff is EXTREMELY friendly and attentive, to the point where you think they are family workers.
The Chili Verde is delicious, chips warm and salsa tasty. Go for lunch specials, and have a Modelo Negra. I think there is a Happy Hour...
Only thing I would like to see offered are Beer Cocktails like a Super Chavela (ice cold salt rimmed margaritas glass with Mexican beer and a shot of tequila in it). I added a picture of it. I'm telling you- if you put these on the menu, they will become the talk of the Treasure Valley! -

Wow! Yelp works!!
We read the reviews and decided to stop in for dinner. We ordered the Enchiladas Jalisco. It came out fast and hot. Wait staff was friendly, helpful, and quick. The atmosphere is great, colorful interior, clean bathrooms, simple and tasteful decor.
The food was delicious! My hubby and I shared a plate and it was plenty. We would give it a solid 8 out of 10 for flavor and amount.
Try this place, I think you'll be happy !! -

Despite coming during lunch traffic on a Saturday with my two small humans, we were treated like honored guests. I rarely eat at a sit down restaurant with my brood and I especially avoid it when my partner is missing. But we needed a pick me up and Pueblo Lindo delivered.
First of all, this place is beautiful. It is bright and welcoming and the decorations are so fun to look at. My oldest was particularly enthralled with the corn husk "flowers" at our table. The staff was so kind and attentive. They brought my girls tiny, lidded glasses of water (smart) and plenty of chips and salsa (again, smart) and kindly assured me that the rice all over the floor was no big deal.
Their chips and salsa are awesome. It comes with a regular red salsa and then a super yummy slaw one. Both were flavorful with a touch of spice. "Hungry", the oldest, devoured both. We ordered the Combo #15, taco (with chicken), enchilada and tamale (with shredded beef). I also ordered an extra side of beans, because who doesn't need a little extra refried beans in their life? We loved all of it. "Hungry" devoured the tamale and asked for more. She loved the chicken, but thought it was a tad too spicy inside the taco (I don't know...kids are weird). We probably liked the enchilada the least, though it was still very good. The beans did have a little extra heat to them, but my adventurous eater was determined to eat them and quickly got used to the spice. :) To top off the meal, they brought us sugared and spiced tortillas with cream. That was definitely a hit.
"Hurricane", the 1 year old, was only at a Level 2 so we were able to finish our meal at a leisurely pace and avoid angry side eye from fellow customers. Overall, it was a successful Saturday outing. -

I'm always hesitant to stop in for a late lunch anywhere, however, the parking lot was half full at Pueblo Lindo and many guests could be seen seated near the windows. This was a welcoming site at 2:00!
Standard chips and salsa hit the table as soon as we did. Nothing remarkable, just good. Ordered the Chile Colorado which was tender and flavored as expected. Huge kids portion of the shredded beef casadilla.
Overall it was a good experience. Didn't find anything particularly extraordinary, however, nothing wrong with decent consistency. -

The only reason I'm giving them 4 stars is because they DO NOT have their liquor license yet and that's kind of a bummer. I love a good Patron margarita with my Mexican food but the only margarita they offer is a pre-mixed Jose Cuervo. However, if you like micheladas (my husband does) theirs are delicious and the presentation is cool too!
We've been twice in the past week and it's definitely our new fave. We love the ambiance and the comfortable seating as well as the delicious food that's reasonably priced.
For starters their salsa is some of the best I've had at a local Mexican restaurant. We also ordered the chile con queso and guacamole dip. If you're not a fan of Velveeta cheese I wouldn't recommend the cheese dip but I'd order double of the guacamole.
We have dined here twice with two different groups and the food is exceptional. Everyone loved their meal. My husband though his seafood alambre was just "okay" and opted for a carne asada torta the next time that he absolutely loved. I can't stayaway from the hard shell tacos... I got both ground beef and chicken and the second visit I also added a verde beef enchilada. We will be regulars from now on... especially once they get their liquor license.
